Hand-picked olives from the Karoo carefully rinsed and pickled in salted water for 3 months keeping chilled below 18°C. After 3 months this hand selection of olives is mixed with a blend of herbs olive oil and vinegar creating a vinaigrette to preserve the olive fruit until table ready. Enjoy as a snack with a selection of cheeses in salads or when cooking with vegetables and meat products.
