Masa harina is a unique kind of flour made from maize that has been cooked in lime water through a process called Nixtamalization invented by the Aztecs thousands of years ago. The maize is finely ground and then dried and sieved to form a flour. It is gluten and GMO free and can be used to make corn tortillas tamales sopes pupusas gorditas empanadas and many more Mexican dishes.
